Winter is here, which means most of your nights are spent watching a movie under a cozy blanket; your closet is full of thick, chunky sweaters; and your kitchen has a constant scent of something delicious cooking in the oven.

In this guide, we’ll be sharing some of our best recipes that are not only easy to make, but are sure to warm you up on a chilly winter afternoon.

#1 – Butternut Squash Soup

Nothing is more inviting than a bowl of butternut squash soup on a cold day. This recipe is incredibly rich and flavorful, making it the perfect lunch or dinner to enjoy this winter. It also requires minimal ingredients, so there’s no doubt it’ll soon become part of your meal rotation.

What You’ll Need:

  • 2 tbsp. butter
  • 1 small onion, chopped
  • 1 stalk of celery, chopped
  • 1 medium carrot, chopped
  • 2 medium potatoes, cubed
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 can chicken stock
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Add in the onion, celery, carrot, potatoes, and the squash. Cook for five minutes, stirring occasionally.
  2. Pour in the chicken stock until the vegetables are covered and bring to a boil.
  3. Reduce heat to low and cover the pot. Let simmer for about 40 minutes, or until the vegetables are tender.
  4. Use an immersion blender or a food processor to puree the vegetables until smooth.
  5. Stir in remaining chicken stock until thick. Add salt and pepper to taste.
  6. Enjoy!

#2 – Apple Walnut Bread

This quick bread is sure to warm up the kitchen of your Kansas City luxury apartment and incorporates some of the season’s best flavors. Enjoy it as a snack or as a breakfast side, or pair it with a scoop of vanilla ice cream to have as a dessert.

 

What You’ll Need:

  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • ½ tsp. vanilla extract
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tbsp. buttermilk
  • 1 cup apple, grated and peeled
  • 1 cup walnuts, chopped
  • ¾ tsp. cinnamon

Instructions:

  1. Preheat the oven to 350°.
  2. In a large bowl, cream together the butter and sugar.
  3. Add eggs one at a time, beating after each addition. Stir in vanilla extract.
  4. In a separate bowl, combine flour, baking soda, and salt.
  5. Combine half of the dry ingredients to the butter and sugar mixture. Add buttermilk.
  6. Stir in the remaining dry ingredients.
  7. Fold in the apple and walnuts.
  8. Pour the batter into a greased loaf pan. In a small bowl, combine 2 tbsp. of sugar with cinnamon. Top batter with the cinnamon sugar mixture.
  9. Bake for 60 to 65 minutes.
  10. Let cool for five minutes before placing on a cooling rack.
  11. Enjoy!

#3 – Pecan Pie

You can never go wrong with a pecan pie, and this recipe is one of our favorites. This classic – yet timeless – pie is great for the holidays, or just any cold day of the year. Whip it up to fill your modern apartment with the sweet smell of holiday baking!

What You’ll Need:

  • 1 unbaked 9-inch pie crust, frozen for at least 30 minutes
  • 2 cups pecans, chopped
  • 3 large eggs, slightly beaten
  • 1 cup light corn syrup
  • ½ cup brown sugar
  • 1 tbsp. molasses
  • 4 tbsp. unsalted butter, melted
  • ½ tsp. salt
  • 2 tsp. vanilla extract

Instructions:

  1. Preheat the oven to 350°. Place a rack in the center.
  2. Start by making the filling. In a medium bowl, mix the eggs, brown sugar, corn syrup, molasses, butter, vanilla, and salt until smooth.
  3. Next, fill the pie shell. Spread the pecans over the bottom of the frozen pie shell. Pour the filling over the pecans.
  4. Bake for 30 minutes. After 30 minutes, loosely cover the pie with aluminum foil to protect the crust and pecans from browning. Bake for an additional 35 to 45 minutes, or until the filling has set.
  5. Remove from the oven and let it cool completely.
  6. Enjoy!
